Chocolate-Banana Parfaits, GF

Ingredients
- Chocolate Pudding
- 3 cups full-fat canned coconut milk
- ⅓ cup sugar
- 3 tablespoons arrowroot powder or cornstarch
- 2 heaping tablespoons unsweetened cocoa, sifted
- 1 teaspoon pure vanilla extract
- Parfaits
- 1 recipe Coconut Pudding
- 1 large banana, sliced
- -Sprinkle of lemon juice
- 6 gluten-free shortbread cookies, optional
- 6 small pieces dark chocolate, optional

Preparation
Step 1
1. To make chocolate pudding, place coconut milk, sugar, arrowroot powder and cocoa in a large microwave-safe bowl and whisk until blended. Microwave mixture on high 2 minutes. Whisk. Microwave 1 minute and stir. Microwave another minute or just until mixture starts to boil. Remove immediately and gently whisk. Add vanilla and stir. Pudding should be slightly thickened but not set. Let stand 5 minutes.
2. Prepare Coconut Pudding as instructed.
3. Pour or scoop a layer of chocolate pudding into each parfait dish. Let set a few minutes. Place a generous layer of coconut pudding on top of the chocolate pudding layer, almost twice as much as the chocolate pudding. Place in the refrigerator to set 15 minutes.
4. Remove from refrigerator and add another thin layer of chocolate pudding. It will sink into the coconut layer. Return to the refrigerator and let set about an hour. (For soft and silky pudding, do not chill.)
5. Toss banana slices in lemon juice. (This keeps bananas from browning.)
6. Right before serving, top each parfait with a few banana slices. Place a single cookie and a piece of chocolate (if using) on each dish and serve.
