Ingredients

  • 8 medium carrots, sliced
  • 2 large onions, chopped
  • 4 celery ribs, chopped
  • 1 large green pepper, seeded & chopped
  • 1 T. olive oil
  • 1 garlic clove, minced
  • 4 cups water or broth
  • 1 (28 oz) or 2 (14 oz) cans diced tomatoes, undrained
  • 2 c. V8 Juice
  • 2 c. frozen cut green beans
  • 1 c. frozen corn
  • 1 c. chopped cabbage
  • 4 medium potatoes
  • 1 1/2 t. parsley
  • Salt/Pepper
  • 1 t. thyme
  • Bayleaf

Preparation

Step 1

In a Dutch oven, saute carrots, onions, celery & green pepper in oil until crisp-tender. Add garlic, cook 1 minute longer. Stir in remaining ingredients and bring to boil.

Reduce heat, cover & simmer for 1 1/2-2 hours or until vegetables are tender.
