Hearty Beef Chili

Ingredients
- 1 (2 1/4 to 2 1/2 lb.) chuck roast
- 1 Tablespoon olive oil
- 1 tsp pepper
- 1 (16 oz.) jar pico de gallo
- 1 c frozen chopped onion
- 1 pkg chili seasoning
- 2 c beef broth
- 1 (6 oz.) can tomato paste

Preparation
Step 1
1. Rub chuck roast with oil. Sprinkle with pepper.
2. Heat a large skillet over medium-high heat. Cook meat for 3 to 4 minutes per side, or until browned. Place roast in slow cooker. Pour pico de gallo over top of roast. Top with onion.
3. In a large bowl, whisk together chili seasoning, broth, and tomato paste. Pour over chuck roast.
4. Cover, and cook on low for 5 to 7 hours. Skim excess fat off top. Remove roast from juices, and shred. Return roast to slow cooker.
