Ingredients

  • 4 4 eggs
  • 1/2 cup125 mLcreamy fat free cottage cheese
  • 1/2 tsp2 mLdry mustard
  • 1/2 tsp2 mLchili powder
  • Freshly ground pepper, to taste
  • 2 tbsp30 mLgreen onions,
  • minced 2 tbsp30 mLcelery , chopped 2 tbsp30 mLred pepper, chopped Cooking spray 4 4 small flour tortillas*

Preparation

Step 1

Beat eggs with cottage cheese, dry mustard, chili powder and pepper, to taste.
Stir in green onions, celery and red pepper. Set aside.
Spray 4 ramekins (1/2 cup/125 mL) with cooking spray.
Place one tortilla in each ramekin, pressing to fit.
Pour an equal amount of egg mixture into each tortilla cup.
Bake in a 375°F (190°C) oven for 20 to 25 minutes or until eggs are set.
Let stand for 5 minutes and serve
