Ingredients
- 6 cans garbanzo beans
- 4-5 cloves garlic
- Juice of 1-1/2 lemons
- 1 cup olive oil
- 1/2 teas. salt
- 6 T. tahini

Preparation
Step 1
Drain and place in large pot. Under warm running water, gently rub the garbanzo beans by picking up a handful and rubbing them together. The skins will start to come off and will rise to the top of the water in the pot. Discard the skins. Continue this until skins are no longer being released. (This takes 10-15 minutes – you may have to do it in two batches) Rinse away skins and rinse and drain skinned garbanzos.
Reserve 1/8 cup whole garbanzos for garnish
Combine the garbanzo beans in cuisinart bowl with:
Process all until very smooth. If necessary, add more olive oil/tahini/lemon juice to get the correct consistency. Taste and adjust for salt and lemon
Serve in a flat dish or shallow bowl. Garnish the top with light sprinkle of finely chopped parsley, a few of the whole garbanzo beans and a drizzle of olive oil. Serve with warm
pita bread cut into quarters or eighths.
