Fusilli with Sausage, Cabbage and Tomatoes 1 Picture

Ingredients

  • 6 tbs olive oil
  • 1 tbs chopped onions
  • 1-1/2 pounds Savoy cabbage or red, cut into strips
  • 10 oz canned plum or stewed tomatoes drained and chopped
  • Salt and ground pepper
  • 10 oz sweet italian sausages, crumbled
  • 1 lb fusilli

Preparation

Step 1

In frying pan, heat 3 tbs. of the oil over medium heat.

Add onion and saute till golden.

Add cabbage and saute for 2 min.

Add tomatoes and season with salt and pepper.

Stir well, cover with lid slightly ajar and simmer over low heat, stirring occasionnally till liquid evaporates ( about 25 minutes).

In small frying pan, heat remaining 3 tbs. oil over med. heat.

Add sausage and cook.

Meanwhile, in a large pot, cook fusilli al dente.

Arrange pasta on warm platter. Pour cabbage sauce over and toss well. Sprinkle with sausage.

Serve piping hot.
