Ingredients

  • 2/3 cup uncooked rice
  • 1 1/3 cup water
  • 3/4 cup black beans rinsed
  • 1 large tomato
  • 3/4 cup cheddar cheese
  • 1/3 cup green onions
  • 1/3 cup vegetable oil
  • 1/4 cup vineagr
  • 1 Tbsp chopped jalapeno peppers
  • 1/2 tsp white sugar
  • salt to taste
  • 1 avocado diced

Preparation

Step 1

In a saucepan, bring water to boil add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat and chill. Mix together rice, beans, tomato, onion and cheese. Whisk oil, vinegar, peppers, sugar and salt. Pour over rice and toss to coat. Refrigerate for 30 minutes. Top with avocado.
