Bars - Gluten Free Lemon bars

Ingredients
- Crust:
- 2 cups Gigi’s Everyday Gluten-Free Flour Blend (Gum-Free), or your favorite gluten-free flour blend without gum
- 1/2 cup confectioners’ sugar (For cornstarch-free confectioners’ sugar, make your own with my simple recipe for Homemade Corn-Free Confectioners’ Sugar.)
- 1/2 cup dairy-free butter substitute (or real butter if you eat dairy), softened
- Filling:
- 4 eggs
- 2 cups sugar
- 1/4 cup Gigi’s Everyday Gluten-Free Flour Blend (Gum-Free), or your favorite gluten-free flour blend without gum
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 1/4 cup fresh squeezed lemon juice (or lime juice for lime bars, or a combination of lemon and lime juice)

Preparation
Step 1
Preheat oven to 350F.
Lightly grease a 9 x13-inch baking dish; set aside.
In a mixing bowl, combine flour blend, confectioners’ sugar and butter substitute; stir until crumbs form.
Press crust mixture firmly and evenly into bottom of prepared pan.
Bake 20 minutes. (See picture below recipe for how crust will look after baking.)
While crust bakes, prepare filling.
In a large mixing bowl, whisk eggs, then add sugar and whisk until sugar begins to dissolve (about 1 minute).
Add flour blend, baking powder, vanilla and salt; whisk to combine.
Stir in lemon juice.
When crust has pre-baked 20 minutes, remove from oven and pour filling over hot crust.
Return pan to oven and bake an additional 25 minutes.
Remove bars from oven and cool completely before slicing.
Serve with dairy-free whipped topping, if desired.
Store in refrigerator.
