White Chocolate Fudge with Ginger and Cranberries

Ingredients
- 1-1/2 cups sugar
- 1 tsp. ground ginger
- 5 oz. can evaporated milk
- 2 tbsp.unsalted butter
- 2 cups miniature marshmallows
- 12 oz. white chocolate chips
- 6 oz. dried cranberries, coarsely chopped
- 1/2 cup chopped crystallized ginger

Preparation
Step 1
Line a 8 or 9" square pan with foil. In a heavy saucepan, combine the sugar and ground ginger. Add the evaporated milk and butter. Place over medium heat and bring mixture to a full rolling boil, stirring constantly. Cook, stirring constantly for 4 to 5 minutes more. Removing from heat. Add marshmallows, white chocolate chips, cranberries and crystallized ginger and stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared pan and refrigerate until firm, about 1-1/2 hours. Lift fudge from pan and peel off foil. Cut into 48 pieces.
