Ingredients

  • 2 lb. beef stew meat or pork spare ribs
  • 2 shin bones
  • 2 cups shredded cabbage
  • 1/2 cup finely shredded beet tops
  • 1/2 cup chopped carrots
  • 1 cup chopped onions
  • 2 cups cooked tomatoes
  • 2 cups cubed new potatoes
  • 6 peppercorns
  • 1 T dill weed
  • 2 cups chopped or shredded beets
  • 1 bay leaf
  • 1 cup sour cream
  • salt to taste

Method:

Brown meat in hot oil and place in heavy large pot. Cover meat with water and boil until tender - skim residue at initial boiling point. Keep meat covered with water. When meat is tender, add vegetables (except potatoes) and seasonings and cook until tender, but not mushy. Add potatoes and heat through. When ready to serve, add a dollop of sour cream to each bowl.
