Ingredients
- 3 T oil
- 3/4 cup sweet red pepper, chopped
- 1-1/2 cups mushrooms, chopped
- 1-1/2 cup zucchini, chopped
- 3/4 cup onion, chopped
- 1 large clover garlic, minced
- 6 eggs
- 1/4 cup heavy cream
- 1 lb cream cheese, diced
- 1-1/2 cups cheddar cheese, shredded
- 2 cups one-day-old bread, cubed
- salt and pepper

Preparation
Step 1
Sauté vegetables in oil until zucchini is crisp-tender; remove from heat and cool.
Beat together the eggs and heavy cream in a large bowl and add the cooked vegetable mixture. Combine cream cheese, cheddar cheese, bread cubes, salt and pepper to taste, and add to the eggs/vegetables mixture.
Pour everything into a well-greased 10-inch springform pan; seal bottom of pan with foil, as eggs run a bit until set.
Bake at 350˚F for 1 hour.
