Ingredients
- 1 lb dried whole yellow peas
- 1 T butter
- 1 large onion, chopped
- 1 lb salt pork, cut into cubes
- ham bone
- 12 cups water
- 1 t dried savory
- 3 T dried mustard
- salted herbs (Miscellaneous section)
- pepper to taste

Method:
Place peas in a colander; rinse under running water. Put peas in a large stockpot; cover with cold water and allow to soak overnight.
In a large pot, melt the butter and saute onion until softened, about 2 minutes.
Add peas, salt pork, ham bone, water, carrots, dried mustard and savory. Bring to boil; cover and simmer for about 1-1/2 hours. Simmer soup until peas are tender (may take 30 minutes more).
Remove 2 cups peas from soup and process in food processor; stir back into soup. Remove meat from salt pork - discard fat and return meat to soup. Remove ham bone; cut meat off the bone and return to soup.
Adjust seasonings using the salted herbs, and serve.
