  • Egg Biscuit Dough
  • 5 eggs
  • 1 cup sugar
  • 1/4 cup milk
  • 3/4 cup oil
  • 4 teaspoons baking powder
  • 3 teaspoons vanilla/lemon flavoring
  • 5 1/2 cups flour
  • Prune Filling
  • 1 1/2 packages pitted prunes
  • 3/4 cup water/cherry juice
  • 3/4 cup chopped walnuts
  • 1 jar cherries
  • 1 shot of rum
  • Frosting
  • 2 cups confectioners' sugar
  • 3 tablespoons milk
  • 2 tablespoons soft butter
  • 2 teaspoons almond flavoring

Preparation

Step 1

Egg Biscuit Dough:
Beat together 5 eggs, 1 cup sugar, 1/4 cup milk and 3/4 cup oil. Add 4 teaspoons baking powder, 3 teaspoons vanilla or lemon flavoring, and gradually add by hand about 5 1/2 cups flour-enough to get a nice texture of dough. Cover and refrigerate for about 1 hour.
Prune Filling:
Add 1 1/2 packages pitted prunes and 3/4 cup water or cherry juice from Maraschino cherries to a pan and cook over medium heat until soft and moist and juice is dissolved. Mash prunes with a potato masher, then add 3/4 cup chopped walnuts, 1 jar of cherries, and 1 shot of rum. Stir all together and cool.
Frosting:
In a sauce pan place 2 cups confectioners' sugar, 3 tablespoons milk, 2 tablespoons soft butter, and 2 teaspoons almond flavoring. Stir over low heat until smooth and creamy.

Cut egg biscuit dough in six pieces; roll each piecee into a oblong shape on a floured surface about 1/2-inch thick one at a time as you stuff them.
Place stuffing in center of dough and gently roll dough jelly roll style, placing it on a greased baking sheet.
You should be able to put three rolls of cookies on 1 baking sheet. Bake in a 350F oven for 30 minutes. Cool. Slice diagonally and frost, or sprinkle the tops with some powdered sugar.
