Ingredients
- 2 cups red or white wine vinegar
- 1/2 teaspoon peppercorns
- 1 peeled garlic clove, cut in half
- rind from 1/2 lemon
- pinch of salt

Preparation
Step 1
Heat vinegar in a non-aluminum saucepan until very hot, but DO NOT boil.
Place peppercorns, garlic, lemon rind, and salt in a non-metal bowl. Cover with hot vinegar.
Cool to room temperature and cover with plastic wrap; store in cool place for two days.
Strain and discard peppercorns and garlic.
Pour vinegar into sterilized bottle with non-metal lid.
OPTION: Add any one or a combination of these herbs: basil, oregano, thyme, cilantro, dill, or chives.
