Ingredients
- 1 1/4 c uncooked elbow macaroni
- 1 lb ground beef (turkey)
- 1 med onion , chopped
- 1 med green pepper, chopped
- 2 garlic cloves, minced
- 2 cans (14.5 oz each) diced undrained diced tomatoes
- 1 can (16 oz) kidney beans, rinsed and drained
- 1 pkg (10 oz) frozen corn, thawed
- 2 T chili powder
- 1/2 t salt
- 1/2 t ground cumin
- 1/2 c shredded pepper Jack cheese

Preparation
Step 1
Cook macaroni according to pkg direct. Meanwhile, in a lg skillet, cook beef, onion, green pepper, and garlic over med heat until meat is no longer pink and veg. are tender, drain.
Stir in tomatoes, beans,corn, chili powder, salt, and cumin. Bring to a boil. Reduce heat, cover and simmer for 15 min. or until heated thru.
Drain the macaroni and add to skillet, stir to coat.
Sprinkle with cheese.
