Ingredients

  • SOUP:
  • Large beef bone or beef shanks
  • 1 clove garlic, peeled and sliced
  • 1 onion, quartered
  • 4 carrots, peeled and quartered
  • 4 parsnips, peeled and quartered
  • 4 stalks celery, quartered
  • 1 Tbsp. peppercorns
  • Pinch of caraway seeds
  • 1 carton beef broth
  • water
  • 4 potatoes, peeled, quartered
  • 1/2 pkg. egg noodles
  • SAUCE:
  • 1 tsp. finely chopped garlic
  • 2 Tbsp. vegetable oil
  • 1 cup milk
  • 2 Tbsp. flour

Step 1

Soup:

Combine beef, onion, carrots, parsnips, celery, peppercorns, and caraway in a large soup pot. Add beef broth and enough water to cover vegetables. Cook over medium heat until the meat comes easily off the bone. Season to taste.

In a separate pot, cook potatoes. Drain and set aside.

Remove the vegetables from the soup pot and set aside with the potatoes. Remove beef bones and shred the meat. Discard bones and add the meat to the vegetables.

Bring the broth to a boil and add noodles. Turn off the heat and stir the noodles for 5 minutes. Cover the pot and leave stand for 10 minutes. Add vegetables and meat to pot.

Sauce:

Heat vegetable oil in a skillet and brown garlic. Add flour to make a paste and slowly add milk. Cook until sauce is thickened. Turn off heat.

Serve in individual stew bowls with sauce over top. Pass more sauce at the table.
