Ingredients
- 2 cups sweet onions
- 3 cloves garlic, minced
- 2 T olive oil
- 3/4 cup vodka
- 2 28 ounce can crushed tomatoes
- 3 T tomato paste
- 1 1/2 t oregano
- 1/2 t salt
- 1/2 t crushed red pepper
- 3/4 cup whipping cream
- 1/2 cup finely shredded parmesan cheese - 2 ounces

Step 1
In a large skillet cook onions and garlic in oil over medium heat until tender. Remove from heat and add vodka, return to heat and simmer about 5 minutes. Transfer mixture to slow cooker and add crushed tomatoes, tomato paste, oregano, salt, and red pepper. Cook on low 6 to 8 hours or on high 3 to 4 hours. Turn on high and add whipping cream and cook 30 minutes. Stir in cheese and cool slightly.
