  • 1 can 14.5 oz diced tomatoes
  • 2 cans 15.5 oz cannellini beans
  • 1/2 cup chicken broth
  • salt & pepper
  • 3 tbsp olive oil
  • 3 garlic cloves sliced thin
  • 2 tbsp chopped fresh basil

Preparation

Step 1

1. Heat 2 tbsp oil, garlic, basil in large skillet over medium heat stirring continuously until oil begins to sizzle and garlic turns pale gold, about 4 minutes.

2. Add tomatoes, increase heat to medium high and cook stirring occasionally until liquid has evaporated, about 10 minutes.

3. Stir in beans and broth until liquid has evaporated, about 5 minutes. Drizzle in remaining olive oil just before serving.
