Ingredients
- 1 dozen corn tortillas
- 1/2 cup oil
- 1 # ground beef or turkey
- 1 onion chopped
- 1 package enchilada seasoning mix
- 1/2 cup water
- 2 cups shredded Monteray Jack cheese
- 1 tsp hot sauce
- shredded lettuce
- 1/4 cup butter
- 1 medium green pepper, chopped
- 1/4 cup flour
- 2 cups chicken broth
- 1 cup sour cream

Preparation
Step 1
Cook tortillas 15 seconds on each side. Brown beef with onions. Add seasoning mix and water. Simmer 10 minutes. Put in 2 Tbs meat mix and 1 Tbs cheese on each tortilla. Roll up and put seamside down in 9x13 dish. Cook melted butter and green pepper til tender then add flour and broth. Cook while stirring until thickened. Stir in sour cream and hot sauce. Cook only until heated through. Pour over tortillas. Sprinkle on remaining cheese. Bake 425 for 20 minutes. Let stand 10 minutes before serving.
