Ingredients

  • lb. each:
  • quartered baby carrots
  • green beans
  • yellow beans
  • 1/2 sliced red onion
  • 2 cups white vinegar
  • 2 cups water
  • 1/4 cup kosher salt
  • 2 bay leaves
  • 3/4 cup sugar
  • zest and juice of 1 lemon
  • 1 tea. peppercorns
  • 1 tea. coriander seeds

Preparation

Step 1

Blanch carrots and beans 2-4 minutes. Cool in ice water, then put in a glass bowl with sliced red onion.

Make brine: boil vinegar, water, salt, bay leaves, sugar, zest and lemon juice. Add peppercorns and coriander seeds. Pour over vegetables and let them cool.

Chill at least 4 hours
