Ingredients
- 1 9" pie crust
- 2 tbsp butter
- 1/3 c finely chopped onion
- 3 tbsp finely diced bell peppers
- 1/2 c diced mushrooms
- 3 large eggs
- 1 c sour cream
- 5 strips crisp, crumbled bacon
- 1 1/2 c grated swiss cheese
- 1 c grated mild cheddar cheese
- 1 dash salt and pepper

Step 1
Poke holes on the inside of pie crust with a fork. Line the inside of pie crust with foil and blind bake at 450 degrees F for 8 mins. Remove foil and bake additional 5 mins or until crust is set and dry. Remove and reduce oven to 350 degrees F. Saute onions, peppers and mushrooms in butter until softened. Combine vegetables with remaining ingredients and pour mixture into pie crust. Bake at 350 degrees F for 40 mins or until center is set. Let stand for 10 mins before cutting. Top each slice with sour cream.
