Collards Southern-Style

This is a very basic way to prepare collards; it's really good and simple to cook. You can use this recipe for any kind of greens: kale, swiss chard, mustard greens, or any combination you prefer.

Ingredients
- 1 Tbs. olive oil
- 1 cup chopped onion
- 6 cups chopped collards
- 1/2 cup vegetable broth

Step 1
In a large skillet, heat the oil over high heat. Add the onion; cook, stirring, until transparent, about 2 minutes. Add the collards; cook, stirring, until the collards are wilted, about 2 minutes. Add the broth; simmer, covered, 15 minutes.
