Ingredients
- 1 whole chicken
- 1/2 onion, peeled and cut into thick slices
- 1 tomatillo, sliced
- 1 bunch cilatro
- 2-3 cloves garlic
- 1/3 cup rice
- 1 can garbanzo beans
Details
Preparation
Step 1
Combine the first 5 ingredients in a stock pot with enough water to cover the chick and cook until the chicken is done.
Strain the broth and return broth to stockpot.
Add rice to the broth and cook until done.
Add chicken and garbanzo beans to stockpot and heat.
Garnish with chopped onion, avacado, cilatro. Serve with limes.
