Ingredients
- Sauce:
- 4 cups sliced rhubarb {about 1-lb}
- 1 cup granulated sugar {7oz}
- 2-3 tablespoons cornstarch
- 1 cup water
- 1 teaspoon vanilla extract
- Crumb Mixture:
- 1/2 cup butter, melted
- 1 cup light brown sugar {8oz}
- 1 cup all-purpose flour {5oz}
- 3/4 cup oatmeal {2.25oz}
- 1 teaspoon cinnamon

Preparation
Step 1
Preheat oven to 325°F
In a saucepan; combine sugar, cornstarch, water and vanilla. Cook together until clear.
Crumb Mix:
In mixing bowl; combine melted butter, brown sugar, flour, oatmeal and cinnamon. Mix together until crumbly. Press half of the mixture into a buttered 8x8” square baking pan. Top with sliced rhubarb.
Pour sugar mixture over rhubarb and top with remaining crumb mixture.
Bake 45-55 minutes.
