Ingredients

  • 2 Eggplants
  • 1 Jar of Prego or Del Monte Mushroom Spaghetti Sauce (26 1/2 oz can)
  • 2 Eggs (beaten)
  • Flour
  • Italian Bread Crumbs or Plain Bread crumbs mixed with Italian Seasoning
  • 1 lb (4 cups) grated mozzarella cheese
  • 1 cup Parmesan cheese

Preparation

Step 1

Instructions: (preheat oven to 350 degrees)

Peel and slice eggplant into ½” thick slices.
Dredge into flour then beaten eggs, then coat with bread crumbs
Place on lightly oiled cookie sheets.
Bake 25 minutes at 350 degrees
Remove from cookie sheet and layer in 9 X 13 inch deep dish pan:
Eggplant
Prego sauce
Mozzarella cheese
Parmesan cheese


Cover and bake for 25 minutes at 350 degrees
Uncover and bake for additional 15 minutes at 375 degrees
Let stand for 10 minutes before serving.
