Ingredients

  • Butterscotch Sauce:
  • 1 cup water
  • 1 cup sugar
  • 1/2 cup butter
  • 1 cup heavy cream
  • 2 tsp vanilla
  • Butterscotch Bar:(dough)
  • 1/2 cup flour
  • 2 tbsp sugar
  • 1 pkg dry yeast
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 egg yolk
  • 1/2 cup flour
  • 3/4 cup butterscotch sauce
  • 1 cup flour
  • Filling:
  • 1 cup chocolate chips
  • 1/2 cup brown sugar, packed
  • 1 tsp cinnamon
  • Topping:
  • 1/2 cup butterscotch sauce

Step 1

1. To make Butterscotch Sauce: In a saucepan, put water and sugar. Cook on hight heat, do not stir. Let water evaporate. Once the sugar has thickened and the color turned to light brown, add the butter and whisk the mixture until smooth. Then add the cream and vanilla and whisk again until smooth and thick. Pour into a jar and set aside in the refrigerator.

2. To make the Butterscotch Bars: In a bowl, combine the flour,baking powder, sugar, yeast and salt and set aside.

3. Heat milk and butter until very warm and gradually add to the flour mixture. Beat the mixture for 2 mins at medium speed. Then add the egg yolk, flour and beat for 2 mins at high speed. Now stir in the 3/4 cup butterscotch sauce, followed by the 1 cup flour to make a stiff batter. Cover tightly with plastic wrap. Set aside in the fridge for 2 hours.

4. For the Filling: Combine the chips, brown sugar and cinnamon. Roll the dough 8x8", sprinkle with 1/2 cup of chocolate chip mixture down center of dough. Fold ends over center (like folding a letter). Repeat rolling, sprinkling and folding procedure twice more using chocolate mixture each time.

5. Finally place the dough in a well butter sprayed 8x8" square pan with parchment paper on the bottom.
Spread 1/2 cup of butterscotch sauce on top. Let rest 10 mins.

6. Bake at 375F for 30 mins Remove from pan, cool. Cut into bars and be prepared for a delightful taste to die for!
