Ingredients

  • 4 cups chicken stock
  • juice of 1 lime
  • 1 can 14 oz diced tomatoes
  • 1 tablespoon canned jalapeno pepper
  • 1 can 4 oz mild green chiles
  • 2 tablespoons fresh cilanto leaves, chopped
  • 1/2 teaspoon ground cumin
  • 1 medium carrot, diced
  • 1 cup corn kernels
  • 2 cups cooked chopped chicken
  • shredded scheese
  • corn tortillas
  • avocado

Preparation

Step 1

1. Simmer chicken stock with tomatoes, lime juice, jalapeno, chiles, cilantro, cumin, carrot, and half of the corn for about 30 minutes.

2. Cool slightly and blend with immersion blender.

3. Add the rest of the corn and the chicken and simmer another 10 minutes over low heat.

4. Check the seasoning. Serve hot with cheese, avocado slices, and tortilla strips.
