Ingredients

  • Base:
  • 1 pouch oatmeal cookie mix (Betty Crocker)
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1/2 cup semisweet chocolate chips
  • Filling:
  • 36 unwrapped caramels
  • 14 oz can sweetened condensed milk
  • 1/4 cup creamy peanut butter
  • 1/2 cup Heath Bits 'O Brickle Toffee Bits
  • Topping:
  • 1 can Betty Crocker Creamy white Frosting
  • 1 or 2 tbsp creamy peanut butter
  • 1/2 cup Heath Bits 'O Brickle Toffee Bits

Preparation

Step 1

1. Heat oven to 350F. Spray a 13x9" baking pan. Set aside. To make Base: In a large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in chocolate chips. Press dough in bottom of pan. Bake 15-18 mins or until light brown.

2. To make Filling: In a 2 qt saucepan, heat caramels and sweetened condensed milk over medium heat, stirring constantly, until caramels are melted. Stir in peanut butter. Heat to boiling. Cook 2 mins, stirring frequently. Remove from heat; stir in toffee. Spread over warm cookie base. Cool completely, about 2 hours.

3. To make the Frosting: Combine frosting and peanut butter in a medium bowl (add more peanut butter if desired). Spread mixture evenly over cooled filling. Sprinkle toffee bits over top. Refrigerate about 2 hours until chilled. Cut into bars, and store covered in refrigerator.
