Neopolitan Whoopie Pies

- 1 box Devil's Food cake mix
- 3 eggs
- 1/2 cup water
- 1/2 cup vegetable oil

Preheat oven to 400. Line a baking sheet with parchment paper.
Mix cake mix, eggs, water and oil in a large mixing bowl on medium speed until fully combined. Drop batter by the heaping tablespoonful on prepared baking sheet and bake for about 8 minutes or until tops spring back when lightly touched. Batter spreads quite a bit while baking, so don't make them too big.
Remove to a wire baking sheet to cool.
Filling:
1/2 cup (1 stick) butter, softened
1/2 cup shortening
7 oz jar marshmallow creme
1 1/2 teaspoons vanilla
2 cups powdered sugar
A few Tablespoons corn syrup, if needed
1/4 teaspoon strawberry extract
Few drops of pink food coloring
1/4 cup semi-sweet chocolate chips
In the bowl of a mixer, combine butter, shortening, vanilla and marshmallow creme. Beat on medium speed until smooth and combined. Add powdered sugar and beat on low until just combined. Scrape sides of bowl and increase speed to high and beat for about a minute. Thin with corn syrup, if needed.
Divide the filling in three bowls. Add pink coloring and strawberry extract to one bowl and stir in. Melt chocolate chips in the microwave and stir into another bowl of filling. Leave the last bowl plain. Spoon filling onto the flat side of half of the cookies, spreading slightly. Strawberry and chocolate go on the ends and vanilla in the middle. Top with the rest of the cookies, pressing down slightly.
