Ingredients

  • Packaged pie crusts
  • 4 cups broccoflower (or mixed broccoli & cauliflower florets)
  • 4 T butter
  • 3/4 lb. ground turkey breast
  • 2 garlic cloves
  • 4 T all-purpose flour
  • 1 c chicken broth
  • 1 c light cream
  • 1 t salt
  • 1 t dried thyme leaves
  • 1 t Dijon-style mustard
  • 1 T sherry
  • 1 c. shredded Swiss cheese

Preparation

Step 1

Preheat oven to 425.

Lay one of the crusts in a 9" quiche or 10" pie pan, and refrigerate.

Steam the broccoflower or broccoli & cauliflower florets.

In skillet, melt 1T butter and brown the turkey meat.
Remove the turkey from the pan and set aside.

Add the remaining butter and the garlic to the pot and stir 1-2 minutes until fragrant.

Stir in the flour and cook for 2 minutes

Slowly whisk in the chicken broth, light cream, salt, thyme, mustard, & sherry.

Continue cooking over low heat until the sauce is smooth.

Sprinkle cheese evenly over the bottom of the chilled pastry-lined pan. Top the cheese with the turkey mixture and then the veggies.

Pour the sauce over the filling.

Fit the remaining pie crust over the top, moistening and sealing the edges.

Bake the pie in oven for 30-35 minutes or until golden brown. Cool slightly and cut into wedges to serve.
