Stuffed Green Peppers

Real stuffed peppers your family will love. This recipe will make more filling than required for 6 peppers. Because it is somewhat time consuming, I like to freeze remaining mixture for later use.

Ingredients
- 6 green peppers, tops removed and insides rinsed with cold water - turn upside down on paper towel to dry.
- 1 1/2 lbs. ground beef
- 1 1/2 lbs. ground sausage
- 1 bag of long grain rice, cooked (do not use instant rice)
- 2 eggs, whipped
- 2 stalks of celery, diced
- 1 medium sweet onion, diced
- 1/2 lb. bacon, cooked and crumbled
- 1 cup parmesan cheese
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp parsley flakes
- 1 tsp salt
- 1 tsp pepper
- 1 large jar tomato sauce of your choice

Step 1
Cook rice according to directions. Set aside and allow to cool.
Remove tops from green peppers, dice tops and set aside. Hollow out inside of peppers, rinse and set aside.
Cook and crumble bacon, set aside.
In bacon drippings, saute diced celery, onion and green pepper tops. set aside.
Cook ground beef and sausage. Drain and return to pan.
To ground meat add crumbled bacon, onion, celery and green pepper. Add garlic and onion powders, salt and pepper. Mix well.
To cooled rice add whipped eggs, parsley and parmesan cheese. Mix well
Add beef mixture and mix well.
Spoon mixture into peppers. Put peppers in slow cooker for 4 hours on high.
Heat Tomato sauce when peppers are almost done cooking and spoon over peppers. Serve and enjoy!
Freeze remaining mixture for later use.
