  • 1/2 cup sugar
  • 4 tbsp butter, room temperature
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • Dash salt
  • 1 large egg
  • 1/2 cup orange juice
  • 1 tsp finely grated orange peel

Step 1

1. Preheat oven to 350f. Grease and flour 8" square pan. In bowl, mix flour, sugar and butter with pastry blender or fork until mixture resembles meal. Measure 1/2 cup of the crumb mixture and move to another cup or bowl.

2. Blend in cinnamon, set aside. To main crumb mixture add baking powder and salt; blend well.

3. Beat egg with orange juice until well blended. Stir with grated orange peel into crumb mixture just until dry ingredients are moistened. Pour batter into prepared pan. Sprinkle the reserved cinnamon crumb mixture over batter.

4. Bake for 20-25 mins or until toothpick or cake tester inserted in center comes out clean.
