Golden Raisin Oat Bars

Ingredients
- Base:
- 1/2 c unsalted butter, melted
- 1/4 c sugar
- 2 tbsp light brown sugar, packed
- 1 c flour
- 1/2 c regular rolled oats ( not quick)
- 1/2 tsp cinnamon
- dash of salt
- Topping:
- 2 lg eggs
- 1 c light brown sugar packed
- 1/3 c flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1 1/3 c golden raisins
- 1 c unsweetened coconut

Preparation
Step 1
Preheat oven to 350
Line 9 inch square pan with parchment so that it hangs over the sides
for base, stir melted butte and sugars together. Add flour, oats, cinnamon and salt and blend. Press mixture into prepared pan and bake for 15 mins, until browned. Allow to cool.
topping: Beat eggs and sugar with electric beaters until fluffy. Fold in flour, baking powder and cinnamon, then stir in raisins and coconut. Spread over cooled base and bake for 20-25 mins, until golden brown. Cool before slicing.
