Ingredients

  • 1/2 cup unsalted butter, room temp
  • 3/4 cup sugar
  • 1/4 cup dark brown sugar
  • 2 eggs
  • 1 tbsp instant espresso powder
  • 1 tbsp vanilla extract
  • 2 2/3 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp black pepper
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Preparation

Step 1

Preheat oven to 350
In large bowl cream butter and sugars till creamy, add eggs one at a time, add espresso and vanilla beat well.
In a separate bowl, combine flour, baking powder, pepper, cinnamon and salt, sift together.
combine dry ingredients to wet ingredients until combined.
form logs and place them on baking sheets.
Bake for 30-40 mins or until firm.
Cool slightly, cut into 1/2 slices and rebake for about an extra 10 mins.
