This is my variation of the recipe in Trim Healthy Mama book.

Ingredients

  • additional optional seasonings:
  • 4 cups pumpkin seeds
  • 2 cups Sunflower seeds
  • 1/2 cup golden Flax Meal
  • 1 cup shredded coconut
  • 1-2 T Cinnamon, to taste
  • 2-4 Tbsp coconut oil, melted
  • 1 Tbsp pure vanilla extract
  • 1 tsp vanilla stevia, or to taste (non-THM can use 2-4 Tbsp Honey or Maple Syrup instead of stevia)
  • 1 tsp ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
  • 1/2 tsp sea salt

Preparation

Step 1

Optional: Soak seeds in filtered water 5-7 hours, then rinse and drain thoroughly.

Mix all ingredients together in bowl. (May want to mix vanilla & stevia into coconut oil, then mix in with remaining ingredients.)

Spread onto parchment-covered baking trays.

Bake at 300 for about an hour, stirring occasionally. (may need 1 1/2 - 2x longer if seeds were soaked)
Or can dehydrate 12-24 hours, until completely dry.
