Ingredients
- 1 (1lb.) block sharp cheddar cheese, shredded
- 1 c. mayo
- 1/2 c. chopped onion
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 to 1/2 tsp. ground red pepper
- 1 c. chopped pecans, toasted
- 1 (12 ounce) jar strawberry preserves

Step 1
Beat first 6 ingredients at medium speed with an electric mixer until blended; stir in pecans. Shape mix into a horseshoe shape, or spoon into a 5-cup mold. Cover and chill 8 hrs.
Spoon preserves over cheese mix & serve immediately with crackers or bread rounds.
NOTE: Cheese mix may be prepared up to 2 days ahead
