French Bean Casserole

Ingredients
- 1 large onion, thin sliced
- 2 Tablespoons butter
- 1 Tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 oz mushrooms
- 1 pound French beans, halved (blanch or microwave for 3 minutes)
- 1 can cream of mushroom soup
- 1 Tablespoon fresh thyme, chopped
- 2 Tablespoons grated Parmesan cheese
- 1/2 cup bread crumbs
- 1 cup grated sharp cheddar cheese

Preparation
Step 1
Preheat oven to 375 degrees.
In a medium saucepan add 1 Tablespoon butter, olive oil, garlic with sliced onion and cook 2 minutes. Add mushrooms with salt and pepper; keep stirring until soft--about 5 minutes, then add cooked beans, 1 Tablespoon butter and ix well. Pour mushroom soup into pot, with thyme and parmesan cheese. Mix well. Season to taste.
Pour into baking dish, mixing everything together, then sprinkle bread crumbs and cheddar over top, and bake 25-30 minutes.
