Ingredients

  • 1 French stick bread cut into 2" lengths
  • 1 + cups assorted wild dry and fresh mushrooms such as morels, shitake, oyster, cremini, chantrelles
  • 1/2 cup 35% cream
  • 1/2 cup chicen stock, heated
  • 1 stick unsalted butter
  • 2 garlic cloves peeled and minced
  • 2 shallots, peeled and finely chopped
  • parmesan cheese
  • 1 tbsp course ground pepper
  • 2 tsp salt

Preparation

Step 1

Remove 3/4 of the filling of the frendh stick pieces to create a bowl.
Place the bread on a baking sheet brush with a little olive oil and bake for 3-5 mins at 350
When brown and crusty remove
Place the cups onto individual plates and set aside
Heat a large fry pan on high
Add butter to melt and oil
add in the garlic and shallots saute quickly, then the mushrooms and toss
Mix in the salt, pepper, chicken stock and water from mushroons and cream mix thoroughly and continue to cook to reduce the liquid
Cook the mushroom mixture until it becomes thick and pasty
Remove from the heat
Using a tsp fill the bread cups with the mushroom mixture to overflowing
Sprinkle with parmesan cheese and return to the oven for 1 min.
Remove from oven and serve immediately.
Can thicken mixture by adding flour/butter mixture.
