Ingredients

  • Cookie Dough:
  • 1 1/4 cups all–purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp allspice
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground coriander
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 stick unsalted butter, at room temperature
  • 2/3 cup (packed) brown sugar
  • 1 tsp vanilla
  • 1 large egg
  • 2 Tbsp molasses
  • Sugar to coat cookies
  • Icing:
  • 2 cups powdered sugar (sifted, then measured)
  • 1/2 cup water
  • 6 bags Celestial Seasonings Sugar Cookie Sleigh Ride Herbal Tea

Preparation

Step 1

_Making the *cookies*:_
1. Preheat oven to *325°F*.
2. In a medium bowl, combine *flour*, *cinnamon*, *ginger*, *allspice*, *nutmeg*, *cloves*, *coriander*, *baking soda* and *salt*.
3. In a separate bowl, use an electric mixer to _cream_ the *butter* and *brown sugar* until fluffy.
4. _Beat_ in *vanilla*, *eggs* and *molasses*.
5. _Mix in dry ingredients_.
6. Place dough in the _freezer for 1 hour_.
7. _Roll dough_ into approximately _24 balls_ and _roll in sugar_ to coat.
8. On a cookie sheet, _press dough balls_ to form _1½-inch rounds_.
9. Bake until cookies puff slightly but are still soft, about 12 minutes.

_Preparing the *icing*:_
1. While the dough is in the freezer start preparing this icing by making the *Tea Concentrate*. To make a *Tea Concentrate*, _boil_ *water* with *Sugar Cookie Sleigh Ride tea bags* in a small pot until it is _reduced_ to just under _½ cup_. Allow to _cool_. Discard tea bags.
2. While the cookies are in the oven, in a mixing bowl, _combine_ *powdered sugar* and *3 Tbsp tea concentrate*. _Stir_ until *icing* is blended and smooth, adding more tea by the teaspoonful if icing is too thick or more sugar by the tablespoonful if it's too thin.
3. Once cookies are out of the oven and cooled off, using a small spatula, _spread a thin layer_ of *icing* atop each *cookie*. Enjoy!
