  • 1 cup plus 2 tablespoons water
  • 9 tablespoons butter
  • 1 cup flour
  • 4 eggs

Preparation

Step 1

1. In medium-sized saucepan, bring water and butter to a full butter.
2. Remove pan from heat and add flour, all at once, stirring vigorously with wooden spoon until mix leaves the side of the pan and forms balls.
3. Return pan to low heat for a minute or two, stirring constantly until a slight film forms on bottom of the pan and dough looks slightly sweaty.
4. Cool.
5. Add eggs, one at a time, beating vigorously after each addition.
6. You may transfer dough to electric mixer before adding eggs.
7. Bake 20 minutes at 400 degrees F.
