Ingredients
- Dressing:
- 1 can black eyed peas
- 1 can black beans
- 1 can pinto beans
- 1 can navy beans
- 1 shoe peg corn (small canned corn)
- 1/2 red pepper, finely chopped
- 1/2 yellow pepper, finely chopped
- 1 small onion, finely chopped
- a few small hot peppers, according to heat desired
- chopped cilantro to taste
- 1/2 cup oil
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup water

Preparation
Step 1
Drain cans and rinse vegetables.
Mix all ingredients together. Refrigerate a few hours or overnight for best flavor.
Leftovers can last up to a week in refrigerator. Scoop chips work best!
