Ingredients
- 2 cups couscous
- 1 can chickpeas
- 1 cucumber, small dice, seeded
- 2 roma tomatoes, small dice, seeded
- 2 tbsp butter or veg oil
- 3 tbs curry powder
- 1 med wihite onion, small dice
- 1/2 bunch cilantro, chopped
- 3 cloves garlice, minced
- 5 cups veg stock or water
- salt and pepper to taste

Preparation
Step 1
Saute onions and garlic in butter or veg oil until translucent. Add curry powder and cook for 3-4 mins. Add veg stock or water and bring to a boil. Pour liquid over couscous to cover. Cover with lid or plastc wrap for 15 mins. Fluff with a fork and add remaining ingredients, season with salt and pepper to taste.
