Ingredients
- 2 sticks butter, soft
- 1 c. less 1 T. brown sugar {7.75oz}
- 1/2 c. less 1/2 tablespoon sugar {3.25oz}
- 2 eggs
- 1 teaspoon vanilla
- 2.5 cups flour {10.5oz}
- 7/8 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups oatmeal {9oz}
- 3/4 cup white vanilla chips+ {5oz}
- 2.5 oz. coconut

Preparation
Step 1
Preheat oven to 370°F
Beat butter and sugars until creamy. Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats, vanilla chips and coconut; mix well.
Drop by large scoop onto un-greased cookie sheet, bake 15 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.
Variation:
Use 2 mashed bananas and 1 cup raisins in place of vanilla chips and coconut.
Add more flour as needed.
