Ingredients

  • 2 sticks butter, soft
  • 1 c. less 1 T. brown sugar {7.75oz}
  • 1/2 c. less 1/2 tablespoon sugar {3.25oz}
  • 2 eggs
  • 1 teaspoon vanilla
  • 2.5 cups flour {10.5oz}
  • 7/8 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oatmeal {9oz}
  • 3/4 cup white vanilla chips+ {5oz}
  • 2.5 oz. coconut

Preparation

Step 1

Preheat oven to 370°F

Beat butter and sugars until creamy. Add eggs and vanilla; beat well.

Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats, vanilla chips and coconut; mix well.

Drop by large scoop onto un-greased cookie sheet, bake 15 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.

Variation:
Use 2 mashed bananas and 1 cup raisins in place of vanilla chips and coconut.
Add more flour as needed.
