Artichoke & Roasted Red Pepper Dip

Ingredients

  • 1/3 cup sliced green onion
  • 2 teaspoons butter
  • 1 - 14 ounce can artichoke hearts, drained & chopped
  • 1 cup shredded parmesan
  • 1 cup mayonnaise
  • 1 - 7 ounce jar roasted sweet red pappers, drained & chopped
  • 1/8 teaspoon pepper
  • 1 tablespoon parsley
  • 2 tablespoons parmesan

Preparation

Step 1

Saute onions in butter until soft. Remove from heat. Stir into a mixture of artichokes, parmesan, mayo, red peppers, pepper & parsley.

Pour into greased quich dish or pie plate. Sprinkle with remaining 2 tablespoons of parmesan.

Bake at 350 degrees for 20 minutes or until heated through.

Serve with crackers

Can be made up to 24 hours ahead of time.
