Ingredients
- 5 chicken legs, halved
- salt and pepper to taste
- 1 onion, diced
- 15 button mushrooms
- 10 strips of bacon julienned (ham or prociutto)
- 1 tsp chopped garlic
- 1/2 tsp thyme
- 1/2 cup dry red wine
- 1 cup beef stock or prepared beef gravy
- cornstarch mixture for thickening if using stock.(add water)

Preparation
Step 1
Season chicken with salt and pepper, garlic and thyme and roast in a 350 degree oven for about thirty minutes, until chicken is golden brown or seventy percent cooked. Reserve juices.
Using a little olive oil, saute bacon, garlic, onion and mushrooms and thyme for about two to three mins, or until bacon is semi crisp. Deglaze with red wine, add stock or gravy and reserved juices from the roasting. Bring to a full boil, and thicken if necessary. Sauce should be slightly thin, gravy like consistency.
Reduce heat simmer for five minutes. add sauce to chicken pieces and roast in oven for 20 mins longer until chicken is fully cooked.
