Poached Salmon

Great Dinner. Any leftover can be chilled and served over salad or salmon salad.

Ingredients

  • 1 1/2 c. fry white wine
  • 1 1/2 c. water
  • 1 lemon, sliced
  • 1 sm onion, sliced
  • 1 bay leaf
  • 6 whole peppercorns
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 3# salmon fillet

Preparation

Step 1

In a large skilllet combine wine, water, lemon, onion, bay leaf, pep0percorns, salt and pepper. Bring to a boil.

Add salmon to skillet (if you need to cut salmon in smaller pieces). Turn heat to low. Cover and simmer gently about 8 minutes or until fish is flaky. Carefully remove salmon: place on serving plate.
