Ingredients

  • 2 pork tenderloins
  • 1 tbsp flour
  • 2 tbsp olive oil
  • 1 red onion thinly sliced
  • 7 oz veg stock
  • 2 tbsp maple syrup
  • 2 tbsp whole grain mustard
  • juice 1 lemon
  • handful of parsley (optional)

Preparation

Step 1

Cut pork into 3 cm thin slices, season with salt and pepper then lightly coat with flour. Heat oil in frying pan. Cook for 5 mins or browned. Remove and Cover.

Add onions to pan add a little more oil if needed, quickly fry until lightly coloured and stock, then bring to a boil reduce stock a little, stir in maple syrup, mustard and lemon juice bring back to a boil.

Return pork and gently simmer for 3-4 mins until cooked through.

sprinkle with parsley.
