Ingredients

  • 1 1/2 lbs Yukon gold potatoes, peeled, and sliced 1/4 inch
  • 3/4 cup heavy cream
  • 1 small onion, finely diced
  • 1/4 tsp dried chili flakes
  • 1 9oz juar roasted red peppers with juice
  • 2 cups grated old cheddar cheese
  • salt and pepper to taste.

Preparation

Step 1

Heat oven to 375.

Cook potatoes in boiling salted water for about 10 mins. Drain and set aside.

In a saucepan, combine cream, onion, chili flakes, 1 tsp salt, black pepper and tbsp of liquid from roasted pepprs jar. simmer for a few minutes, then add 1 cup of the cheese and stir till it melts. remove the pan from the heat.

Assemble the casserole: 1/3 of the potatoes, 1/2 the roasted peppers, and repeat layers till done, with potato layer on top. Pour sauce over the layers cover with foil, and bake on middle rack for 15 mins.

Uncover the dish, sprinkle cheese on top and return to oven on top rack. Bake for another 8 mins, till cheese is bubbly and lightly browned.
