Ingredients
- 3 cups flour
- 1 t salt
- 1/4 t nutmeg (optional)
- 4 eggs, beaten
- 1/2 cup water (or more)
- 1/4 cup butter
- 1 onion, chopped
- 1/4 cup real bacon bits

Method:
Sift flour, salt, and nutmeg together in a bowl. Pour eggs and 1/4 cup into middle of flour mixture; beat with a wooden spoon. Add enough water to make the dough slightly sticky, yet keeping it elastic and stiff. Allow dough to sit for 30 minutes.
Using a spätzle press or a colander with medium holes, press the noodles into a large pot full of boiling salted water.
You may place the batter on a plate; tip the plate and cut noodles from the edge of the plate. Cook until noodles come to the surface. Drain noodles well.
Fry onion and bacon bits in 1/4 cup butter, until onion is translucent. Add spätzle and mix well. Serve hot.
