This is an all-time favorite of my family's. It is easy and quick to prepare, because it is totally cooked in the microwave. Enjoy!

Ingredients

  • 2 tablespoons butter
  • 1/2 teaspoon dried sage, crushed
  • 6 chicken breast halves, skinless/boneless
  • 1 green pepper, cut into thin strips
  • 1/3 cup sliced fresh mushrooms
  • 1 (15 oz) can tomato sauce
  • 1 1/2 teaspoon dried oregano, crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon pepper
  • 6 thin slices Swiss cheese
  • 6 thin ham slices

Step 1

In a large microwave-safe baking dish, combine butter and sage. Microwave, uncovered, on high for about 50 seconds. Meanwhile, rinse, then dry chicken and add to dish, coating both sides of each piece. Add green pepper and mushrooms. Cover with vented plastic wrap, and cook on high 12 minutes or until chicken is tender and no longer pink, turning chicken over and re-arranging at least once. Remove chicken and vegetables from dish with a slotted spoon. Stir tomato sauce, oregano, garlic powder and lemon pepper into the drippings in the dish. Cover, cook on high for about 7 minutes, or until hot and bubbly. While sauce is cooking, wrap each piece of chicken with a slice of cheese, then a ham slice. Place these atop the sauce. Top with the vegetables. Cook, covered, on high for 5 minutes or until heated through, giving the dish a half turn once (if you don't have a turntable), during cooking. Serve with rice or spaghetti.
